Summer rolls recipe

 

These fresh rolls are a perfect snack or a light lunch time treat, give them a go today.

What you'll need

  • 50 g Vermicelli noodles
  • 12 rice paper sheets 
  • 100 g bean sprouts 
  • 100 g carrot, cut into matchsticks 
  • 100 g cucumber, cut into matchsticks 
  • 5 g mint leaves
  • 5 g coriander sprigs
  • 5 g garlic chives
  • 1 fresh yuzu  
  • 50 ml Ginger & Ginseng Dressing

Ginger & Ginseng Dressing/ Dipping Sauce

  • 5 g ginger 
  • 200 ml ginseng tea
  • 5 g miso paste
  • 20 ml sweet chili sauce 
  • 2 g white sesame seeds 
  • 10 g peanut butter 
  • 5 g garlic, finely chopped
  • 5 g coriander 
  • 5 ml soya sauce 
  • 1 lemon, juiced 
  • 2 g black pepper

What you'll do

1. Place the noodles in a heatproof bowl and cover with boiling water. Set aside for 5 minutes to soften. Drain.

2. Soak 1 rice paper sheet in warm water for 30 seconds or until soft (don’t soak the sheet for too long or it will tear).

3. Drain on paper towel. Place on a clean work surface.

4. Lay down a little of the noodles, bean sprouts, carrot and cucumber onto the softened rice paper.

5. Drizzle with a little Ginger & Ginseng dressing.

6. Top with 1 mint leaf and 1 coriander sprig.

7. Fold in ends and top with 1 garlic chive and roll up firmly to enclose filling.

8. Break up the yuzu segments and use the pods for garnish on the plate.

9. Serve with the dipping sauce on the side.

These flavorful chicken skewers are marinated in coconut milk and spices, then grilled and served with a delicious spicy peanut sauce for dipping. Anytime we go out for Thai food, we ALWAYS order the satay! My husband is obsessed with coconut milk and peanut sauce, so I thought I’d surprise him with his favorite appetizer, and serve it as a main dish instead.

These flavorful chicken skewers are marinated in coconut milk and spices, then grilled and served with a delicious spicy peanut sauce for dipping.

He gave these the thumbs up, so I will def be making them again. The chicken marinade I adapted from a recipe I found on the Food Network, but I used my tried and true peanut sauce recipe that never fails me. To lighten it I used Better N Peanut Butter which I really love in sauces (they carry at Trader Joe’s) but regular peanut butter would also work. To make it a main dish, we served it with rice and sliced cucumbers. These would also make a great appetizer if you’re entertaining outdoors this summer!

To prevent the sticks from burning, I recommend soaking them at least one hour while the chicken marinates.

Grilled Chicken Satay with Spicy Peanut Sauce

These flavorful chicken skewers are marinated in coconut milk and spices, then grilled and served with a delicious spicy peanut sauce for dipping.

Ingredients:

  • 1/2 cup light coconut milk
  • 1 tablespoon Asian fish sauce
  • 2 teaspoons red curry paste
  • 1 teaspoon brown sugar
  • 1 tablespoon chopped cilantro
  • 1/2 teaspoon ground turmeric
  • 1/2 tsp kosher salt
  • freshly ground black pepper, to taste
  • 1 -1/4 pounds thin sliced boneless, skinless chicken cutlets
  • 16 large Bamboo skewers, soaked in cold water
  • lime wedges, for garnish
  • 1 tbsp chopped cilantro, for garnish
  • 1 tbsp chopped peanuts, for garnish (optional)
 

For the Peanut Sauce (makes 1/2 cup):

  • 1/3 cup low sodium chicken broth
  • 2 tbsp Better’n peanut butter
  • 1 tbsp reduced sodium soy sauce (Tamari for gluten-free)
  • 2 tsp honey
  • 1 tsp Sriracha chili sauce
  • 1 tsp freshly grated ginger
  • 1 small clove garlic, minced

Directions:

  1. In a bowl, mix the marinade ingredients except the chicken. Slice the chicken into long, thin strips, about 3 inches long by 1 inch wide, and add to marinade. Turn chicken to coat, cover and refrigerate at least 4 hours or longer.
  2. Meanwhile, prepare the peanut sauce. Combine all the ingredients in a small saucepan and whisk well. Bring to a boil, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Set aside to cool to room temperature.
  3. Prepare grill to high heat and thread marinated chicken onto soaked bamboo skewers. Place on grill and cook 2 to 3 minutes per side, or until cooked through. Serve with lime wedges and peanut sauce and garnish with cilantro and peanuts.

Let me tell you this an extremely difficult exercise for me. I struggle with 30lbs barbell for 8 reps. The burn is incredible and it adds bulk to the shoulders.

It is hard to do the first rep but push pressing the first rep is the smartest idea because the first is from a bottom deadstop (and nobody starts a bench from the bottom for a reason.)

Try this delicious carrot cake recipe from SHA Wellness Clinic for a treat.

 

What you'll need:

  • 1 cup wholewheat pastry flour 
  • 1 cup chestnut flour 
  • 1 tbsp baking powder 
  • 1 tsp baking soda 
  • 2 tsp cinnamon 
  • 1/2 tsp nutmeg 
  • 1/2 tsp all-spice
  • 1 tsp ground ginger
  • 1/2 tsp sea salt
  • 1/2 cup coconut oil 
  • 2/3 cup maple syrup 
  • 2/3 cup soy milk 
  • 2 tsp vanilla extract 
  • 1 cup walnuts, toasted and chopped
  • 2 cups grated carrot 
  • 1/2 cup pineapple, crushed 

Method: 

Preheat the oven to 180° C.

Sift flour, baking powder, baking soda, spices and salt into a bowl.

Mix oil, maple syrup, soy milk, and vanilla extract in a bowl with a whisk.

Combine the wet and dry ingredients to form a batter.

Add the walnuts, carrots and pineapple and mix gently.

Pour the batter into 2 oiled cake tins and bake for 25–30 minutes. Set aside to cool.

Garnish with grated carrot.

If you follow me on Instagram, you probably noticed a few photos floating around from the Do At The Zoo event I attended at the Denver Zoo a week or so ago. This was my first time attending this event and all I can say is, WOW was I impressed.

I remember going to the Denver Zoo as a kid, even when I lived in Kansas City and only visited Denver every so often. My grandparents loved to take me and my cousins there, and I would spend hours just staring at all the different animals (especially those penguins). So getting the chance to experience such a beloved place in a totally new and exciting way was such a highlight for me! Food and drink was spread throughout the park, the animals were out and more active, and there was great music playing all over the place. I kept jumping back and forth between the different bands because I couldn’t decided which one was better!

The real highlight was the FOOD.

This little baby elephant was so friendly! I just wanted to give him a hug, which I know is weird and unrealistic, but look at that face! To top the entire night off, they were letting everyone take free carousel rides! I have never in my life heard so many giddy adults laughing hysterically at the same time. If you haven’t had a chance to attend this amazing event, I sincerely encourage you to next year. It’s so much fun, benefits all these amazing animals and you can stuff your face with more food than you know what to do with (aka my one true goal in life). Thank you again Denver Zoo!
