Ok, so this pasta is the new dish that I could make over and over and over… yea, I know, you get it. I’m obsessed and here I am rambling on about it again and again.

Can we just take a moment to chat about how much heartburn totally SUCKS when you are pregnant?? Some of my favorite foods are officially off limits, even when I am craving them like no other (for example, potstickers and egg rolls… I miss you very much).

Greek Turkey Burgers

These Greek Turkey Burgers, mixed with Kalamata olives, feta, and spinach,combine all my favorite Greek flavors and can be served with or without the bun.

These Greek Turkey Burgers are so flavorful, and I love that they can be served two different ways. Serve them on a toasted whole wheat bun with butter lettuce, cucumber slices, thin red onion slices, sliced tomato, and a little Greek yogurt or as a main dish without the bread served with rice, tomatoes, cucumbers, and red onion on the side. 16 weeks pregnant picture

16 weeks pregnant now! I wish I could say that the time is flying by buuuuuuuut it really isn’t LOL. It feels like it’s going fast at the end of each week, but then I realize just how many weeks are left and, well, I’m not even halfway through it all yet.

Being 16 weeks pregnant is kind fun since I’m starting to really show and I am starting to feel those little flutters in my belly. It’s the craziest sensation! Unfortunately the side effects of pregnancy are still present, and some new ones are popping up… I am talking about it a bit more in detail over on Instagram today, but the highlight of this week is that I heard baby boy’s heartbeat on Monday 🙂

It’s just so crazy to be growing a real human life inside me. Totally surreal and absolutely fascinating what our bodies can do, am I right? (more…)

I love making crustless quiche for weekend brunches. They are so simple to make. Plus, since there’s no crust, not only is it healthier, but it’s also quicker to prepare. You can mix all the ingredients the night before so it’s ready to bake when you wake up. This Quiche Lorraine is made with Bacon and Gruyere, but you can also try my Ham and Cheese Crustless Quiche, Crustless Broccoli and Cheese Quiche, or if you want the crust this Spinach Ricotta Tomato Quiche is delicious.

These brownies are so incredibly rich and fudgy you won’t believe there’s no oil or butter added. And, since they are made with ground almond meal instead of flour, they also happen to be gluten-free. A Dirty Mojito is a classic cocktail that everyone should know how to make, especially when the weather starts getting warmer. The addition of spiced rum to the classic recipe, in lieu of the white rum that is standard in a mojito, really brings out extra depth and flavor in every sip.

I am rebelling against the snow we keep getting this month by transporting myself mentally to a beach in Mexico every chance I get.

All I can think about this week is warm weather, beautiful blue waters, and the white sand between my toes. It’s almost enough to make me feel like it’s not snowing outside as we speak.

Since it is almost May, I have been forced to bring some cocktails with me on this mental journey to warmer weather. Let me introduce you to my little friend….

In case you missed it on social media yesterday, we are having a baby boy!

The Man and I both thought with the upmost certainty that it would be a girl. So did both of our families, but boy were we wrong LOL. We are so excited for our little wizard to join us in 2021 (which feels like FOREVER from now, btw).

I talked about it a little bit on social media already, but this pregnancy has been a bit tough. Yes there’s been aches and pains, there was nausea, and there’s still ample exhaustion and headaches. But, more than all that, it’s been awfully lonely given the quarantine and all the time we spend at home. (more…)
