1. A new month means it’s time for some reflection and changes. I don’t know about you, but the past couple of months have been a real struggle. Motivation has not been my strong point, let’s just say that. I’ve been trying each day to make small changes that will turn things around, and I think I may be finding a new normal… FINALLY. Next month, my big goal is a new workout routine so I can get back to feeling healthy and strong once again. Do you have any goals for the new month?? Tell me below!

This Lighter Eggplant Parmesan is one of my favorite ways to eat eggplant. No breading, just eggplant, cheese and marinara.
Baked Eggplant Parmesan
What is eggplant parmesan? Traditionally eggplant parmesan is breaded and fried before baking. I made this low-carb and lighter by roasting the eggplant in the oven instead and skipping the breadcrumbs altogether.

This week’s meal plan takes advantage of summer fruits and vegetables like zucchini, tomatoes, corn and watermelon.
If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!

Lobster Rolls scream summer to me! Made with chunks of chilled lobster tossed with celery, shallots, chives, light mayonnaise and a little lemon zest served on a hot dog bun – delicious!
When you want an extra special lunch, this is it! This easy lobster roll recipe starts with fresh steamed lobster, if live lobsters aren’t available near you, frozen tails or fresh lump crab or even shrimp would be great! To keep it light, I mix in a little 0% Greek yogurt with the mayo, you can’t tell!
A Cherry Rosé Mimosa is a simple and elegant combination of tart cherry juice, sparkling dry rosé wine, and a touch of simple syrup. The recipe makes the most of the cherry season and it’s the ideal accompaniment for your weekend gatherings. It is ALL the brunch goals!

No matter what, brunch will always put a smile on my face. I really don’t care how basic this sounds, it is true and I shall scream it from the rooftops!
Brunch is all my favorite things wrapped into one. It’s one time of day where you can mash up breakfast and lunch, all in one meal, alongside some booze.

1. Lately, my one saving grace has been books. Whether it’s physical books I’m holding in my hands, or an audiobook I listen to as I cook in the kitchen, these stories have been taking me away to a whole different world lately. I just finished About What Was Lost: Twenty Writers on Miscarriage, Healing, and Hope (aff. link) and am now starting Waiting for Daisy: A Tale of Two Continents, Three Religions, Five Infertility Doctors, an Oscar, an Atomic Bomb, a Romantic Night, and One Woman’s Quest to Become a Mother (aff. link). These two have really been helping me navigate the world of miscarriage and this new club that I am a part of (that I kind of wish I never had to be a part of). It’s been healing, and escaping into the worlds offered in audiobooks has been the break I need from the grieving process as well. All I can say is I am desperate to put together our library corner in the basement now – I mean, how cozy does this library nook look from The Broadmoor? I think it’s about time I escaped back there for a long weekend, don’t you?

Tzatziki Fish Tacos have a Greek twist! Crisp breaded fish fillets served on tortillas topped with tzatziki sauce made with Greek yogurt, cucumbers and fresh herbs.
I love fish tacos, some favorites are Cilantro Lime Fish Tacos, Blackened Fish Tacos and Lobster Tacos. Since my family is obsessed Tzatziki sauce (we eat it with everything!) I thought why not make fish tacos with a Greek twist. Bake them in the oven or make them in the air fryer! Directions provided both ways.
