Creamy Salsa Verde Chicken Baked Taquitos

http://bit.ly/2WlzTd7

Creamy Salsa Verde Chicken Baked Taquitos are the ultimate way to celebrate National Salsa Month! Tender chicken is cooked in roasted salsa verde, then combined with black beans, avocado, and cheese to fill crispy baked tortillas. The handheld recipe can be served as an appetizer, snack, or even a main course.

Did you all know that it’s National Salsa Month?

Dipping in salsa verde

Oh boy, if there ever was a month that could fit me better, I dare you to find it.

I literally eat salsa every. single. day. No I swear that I am not exaggerating when I say that. Salsa is just something that is in my BONES. I put it on everything (and I am not ashamed of that fact). As I am sitting here writing this post, I’m gobbling down bites of grilled strip steak that have been topped with some HERDEZ® Roasted Salsa Verde. (more…)

http://bit.ly/2MdQYAH

When it comes to ordering the best delivery (or pickup) for those lazy nights when I don’t want to cook, I turn to my top five Asian dishes to order for delivery right here in Denver. From my fave pad thai to the most flavorful ramen, here’s how to get the best of Grubhub in the three-oh-three.

Spread of various Asian dishes

So, obviously, I cook a lot.

Eating ramen noodles in the kitchen

I think that’s pretty apparent if you’ve ever been on this site before.

However, there are some nights when cooking is the last thing I want to do. Contrary to what you might think, our house isn’t always full of leftovers.

Pineapple Shrimp Fried Rice

Pineapple Shrimp Fried Rice has a delicious flavor combination of savory, sweet and spicy. Serve it in hollowed out pineapples for a beautiful presentation!

Pineapple Shrimp Fried Rice
Pineapple Shrimp Fried Rice

I love fried rice, it’s one of my favorite foods! This shrimp fried rice dish is inspired by a Malaysian restaurant I used to frequent before they closed down. You may also like this vegetarian fried rice with edamame, or this low-carb cauliflower fried rice instead.

Our wedding photo for our anniversary

1. It’s anniversary time! One year of wedded bliss has come and gone… It’s always so hard for me to put my feelings into words when it comes to an anniversary, because there’s so much to include. How do you convey the ups and downs, the love and laughter, the tears and trials of an entire year of marriage together? The Man and I have had our share of adventures and with so many more in store for this next year, I really can’t wait to see where life takes us! Who knows where we’ll be for the next anniversary.

2. You all know I LOVE poutine, but there’s a lot more Canadian food to explore. Honestly, I am a novice so I am loving this round up of Canadian cookbooks. Doesn’t Feast look incredible?!

3. Song of the Week is The Book Of Love by Peter Gabriel. You know, in honor of our anniversary and all. I literally haven’t stopped listening to this song for the past couple of days. It’s on repeat and I’m soaking in every memory that it brings into my mind. (more…)

Grilled Avocado Caprese Chicken

http://bit.ly/2YQH1L1

Grilled Avocado Caprese Chicken is a healthy and fresh summer take on the classic flavor combination. Drizzled with a balsamic reduction, this is an easy recipe that is ideal for your weeknight dinner routine, or even your next summer patio party!

Easy chicken recipe for dinner

I used to eat a caprese salad almost every day when I lived in Rome for study abroad. The ingredients were so darn cheap at the local market, and the moment I learned which aged balsamic vinegar to buy…

Let’s just say I was sold.

Chicken with avocado, tomato, and mozzarella

The flavors of a caprese salad are super simple, in case you aren’t already familiar with them. There’s tomato, fresh mozzarella, and fresh basil leaves, all layered and drizzled with your favorite balsamic vinegar.

Skinnytaste Meal Plan (May 27-June 2)

A free 7-day flexible weight loss meal plan including breakfast, lunch and dinner and a shopping list. All recipes include calories and WW SmartPoints®.

If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.

There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

Lastly, if you’re on Facebook join my Skinnytaste Facebook Community where everyone’s sharing photos of recipes they are making, you can join here. I’m loving all the ideas everyone’s sharing! If you wish to get on the email list, you can subscribe here so you never miss a meal plan!

Also, if you don’t have the Skinnytaste Meal Planner, now would be a great time to get one to get organized for 2019! There was a print error last year, but it’s perfect now! You can order it here!

THE DETAILS:

Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!

The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.

And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!

This easy meal-prep honey-sriracha chicken dish, which can also be served as a main dish, is made on a sheet pan and comes together quick!

It’s been a while since I posted a new meal prep recipe, I made this just before my trip to Italy and loved how it turned out.
