Friends, this is one of the best discoveries I’ve ever made.
I remember I tried tomato confit in a local restaurant just a month or two ago. It is such a simple concept, so I didn’t think I was going to flip out over like I did.
Essentially, tomato confit is cooking tomatoes slowly in extra virgin olive oil with some fresh herbs and cloves of garlic. The large tomatoes start to burst while remaining plump, helping them to retain all the richness of the oil and all the smooth, savory flavors of the other ingredients.

1. I spent earlier this week going through the wedding photos with my mom and reliving all those moments was just heavenly. It’s hard to believe it’s all over now, with all the build up to the wedding weekend, the reception, and our honeymoon… It’s even harder to believe it’s been THREE MONTHS. The good news is the name change is almost done, the memories were all vividly captured, and being man and wife is pretty darn lovely 🙂 I know I’ve been showing you little sneak peeks here and there, so hopefully you are digging them 😉

That special time is the week of Denver Food + Wine Festival and I am jumping up and down with excitement and anticipation for this year’s events. The week is fast approaching (next week!) starting September 4th through 9th.
If you haven’t attended in the past or simply haven’t heard of this amazing week, it’s essentially a week of the best foodie events here in Denver. I have been going to this festival for 5 years now (gah, I can’t believe it’s been that many years), and I can honestly say that each year has been more incredible than the last. All I can say is it feels like waking up on Christmas morning every single day of this foodie celebration week.

Skinnytaste Meal Plan (Aug 27-Sept 2)
A free 7-day flexible meal plan including breakfast, lunch and dinner and a shopping list. All recipes include calories and Weight Watchers Freestyle™ SmartPoints®.
The last week of August is always bittersweet. I love the summer, but I also love the Fall. New month means new goals, cooler temps, comfort food like One Pot Cheesy Turkey Taco Chili Mac, schedules, cozy sweaters, etc. I’m also thrilled to get so many emails from those of you using the meal plans!!
If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!

1. This week has been all the insanity and dear lord I need a big ol’ beer. How is it only Wednesday? If you check out my stories on Instagram, you’ll know that I have decide to take on the project of reorganizing my kitchen and pantry… O.M.G. it’s a lot. From figuring out how to organize my spices to better tupperware storage, I am going for it all. Soooooo be sure to follow along as this journey progresses. I promise I’ll be posting a post highlighting the makeover (makeover is probably a strong word but it sure sounds nice, doesn’t it?)! In the meantime, any burning questions about kitchen/pantry organization??
2. After our trip to Japan I’ve been getting into manga and comics. So I am really excited about this giant roundup of comics about friendship! My reading list just got a wholllllle lot longer.
3. Song of the Week is When We Drive by Death Cab For Cutie. Their new album came out last week, and I just got it on vinyl… It’s pure magic. One of the better albums they’ve put out recently, and it’s so good it’s almost making me forget that they aren’t coming to Denver this tour.
