Skinnytaste Dinner Plan Week 27. I’ve added some of my family’s favorite Mexican inspired dishes for Cinco De Mayo. Don’t forget that Sunday is Mother’s Day! Everyone is going to my mom’s for Mother’s Day and as my aunt can’t tolerate gluten or dairy, I am bringing a simple 5 ingredient almond cake that is light, easy and gluten free. I’m also hosting a twitter party Monday with 1800Flowers at 1pm EST where they will be giving away over $1000 in prizes! #AllABoutMom

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Bacon Parmesan Quick Bread is a super fast bread recipe that comes together in 30 minutes! No waiting for dough to rise and it goes great with anything you’re having for dinner.
The bread is BACK, you guys. It was only a matter of time before I baked up a fresh loaf to share with you. The only problem with baking up a quick bread like this? It’s gone that very same day. Even if it is just me, myself and I (well and Kya, you know, to clean up the crumbs).
This bacon parmesan quick bread is one of those recipes I’ve had in my back pocket for years whenever I either forgot to get bread for a dinner I was hosting or just desperately need bread in my life. This hearty Rosemary Chicken Salad with Avocado and Bacon is HUGE – perfect when you want a low-carb meal that will fill you up! I actually split this between three people, and felt completely satisfied.
This delicious recipe is from Heather Christo’s first cookbook Pure Delicious. A cookbook filled with 150 Allergen-Free recipes including gluten, dairy, soy, nut, shellfish and cane sugar. But don’t be fooled, the recipes are amazing and her photography is stunning!
For this recipe, I modified the ingredients slightly to lower the calories buy reducing the olive oil a bit, and using skinless thighs instead of using the skin. If you want to further reduce the calories you can use chicken breast instead and use 1/2 of an avocado. This recipe was a keeper, also great for the summer if you want to make the chicken on the grill.

We chat to yogi star Leah Simmons about her her fit life and how she fuels her body.
Leah Simmons prides herself on being the girl-next-door – who just happens to twist her body into amazing yogi shapes. A qualified Pilates and fitness instructor who hates to cook, she fuels her body with organic and wholesome food, and powers her Instagram with poses we can use for good health.
Day on a plate
Meal 1: 500 ml water with 2 g chlorella.
Meal 2: A long black coffee, two free-range eggs (boiled or scrambled) with one piece of organic rice loaf and one tbsp organic sauerkraut or kimchi.
Meal 3: Post-workout shake containing ½ frozen banana, handful of fresh or frozen berries, one large dollop of coconut yogurt, ½ cup coconut water, one tbsp pea and brown rice protein powder, one tsp superfood powder, and a pinch of Himalayan pink salt.
Meal 4: Big salad with 100 g tuna or grilled chicken and a homemade dressing containing extra-virgin olive oil and organic/raw/unpasteurised apple cider vinegar.
Meal 5: Green vegies with 150 g of a lean protein and ½ cup brown rice.
Simmons says
I am definitely not a foodie. Frankly, I just don't have time to create mouth-watering masterpieces of 'infused-this' and 'slow-cooked-that'. That doesn't mean to say though that I don't think about what I eat and appreciate food. I limit my alcohol intake and I eat a very healthy, balanced, organic diet that complements my training regime.
I would say that my overall diet is high protein, with a balance of good fats and carbohydrates. I always have a protein shake after training, unless I am trying to lean out for a photo shoot. If that's the case, I will avoid all sugar including fruit and limit my liquid intake to just water.

This grilled balsamic flank steak with tomatoes and arugula salad is an easy weeknight dinner solution –marinate the steak overnight with balsamic vinegar and fresh herbs, then fire up the grill and serve with a simple tossed arugula-tomato salad, on the table in less than 20 minutes!
This recipe was adapted from the Malibu Farm Cookbook, a beautiful book that totally gave me farm envy! After reading this book I wanted to pick up, move to Malibu, get some chickens, goats and honey bees and grow all my own food. But since that’s not a reality (and I’m sure it’s a lot more work than I can even imagine) thumbing through this beautiful book gave me a small taste of life on the Malibu Farm.
The original recipe in the book was made with skirt steaks, but to lighten it up I used leaner flank steaks instead which are perfect for cooking on the grill.

Lemon Meringue Cookies taste like a shortbread cookie with a burst of lemon and a cloud of puffy sweetness on top. The shorter way to describe them would be heavenly.
Sometimes you just want to turn a pie into a cookie, right? I don’t know why I really wanted to make this pie cookie miracle happen but, you guys, it’s essentially genius.
I used to have a crazy obsession with lemon curd. I mean, I still adore the stuff but I’ve had to pull back because I kept getting way into the expensive bottles and every summer at the farmer’s markets – poof! There goes all my money. (more…)
