Macaroni and Cheese Soup with Broccoli is comfort food at it’s best! It’s a classic mac turned into and kid-friendly bowl of soup.

Now that the weather is getting colder, we are having soup for dinner quite often. We love this easy mac and cheese soup made with sharp cheddar cheese, broccoli, vegetables and elbow macaroni. The kids love it too, a great way to get kids to get more veggies in their diet. More soup recipes we also love this time of year are Minestrone Soup and Cheeseburger Soup if you want to have some meat in your dish.

1. Well, the fall has come and gone here in Colorado… Now we are covered in epic amounts of snow! Ok, maybe not EPIC amounts of snow, but there seems to be a constant amount of snow continuing to fall. It’s actually a lovely winter wonderland outside and I can’t help but feel as though it’s late November instead of almost Halloween. Perhaps that just my heart and soul getting super excited for Christmas… I am pretty sure that’s what it is and I think this might be the first year that I break my “don’t decorate until after Thanksgiving” rule. Honestly, after the year I’ve had, I need some endless sparkly and festive joy surrounding me. So judge all you want, I’ll be over here with my spiked hot chocolate, Christmas carols, and twinkly lights 😉

Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals!
About The Meal Plan
If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!
*This is just a guide, women should aim for around 1500 calories per day. Here’s a helpful calculator to estimate your calorie needs. I’ve left plenty of wiggle room for you to add more food such as coffee, beverages, fruits,
snacks, dessert, wine, etc.
**Green salad includes 6 cups mixed greens, 2 scallions, ½ cup each: tomatoes, cucumber, carrots, and ½ cup light
vinaigrette. Boil an extra 6 ounces spaghetti for lunch leftovers.

Sometimes the only thing I want for dinner is a hot sandwich. This Crock Pot French Dip sandwich satisfies that craving and those caramelized onions at the end make it amazing!! And is there anything better than dipping a sandwich in that delicious au jus? I think not!
1. Europe was… so much more than I thought it was going to be. I mean, it was full of all the plans that I had made and the food I hoped to eat. It was also full of spontaneous surprises, silly laughter, relaxation, nights spent with too much wine, and early morning flights. There were many MANY pastries, winding drives in Italy where I thought we might be run off the road, girly picnics under the Eiffel Tower, and so much more. Thinking back to the last few weeks, I can’t help but feel incredibly lucky to have had such an amazing experience. Now we are home… and I am trying to adjust to the feelings of being home. There’s been a little bit of jet lag and my body is adjusting to a diet and working out again (UGH). Coming home still feels a little empty without Kya’s squeals in the background. I feel rested and at peace, but there are little pockets of grief that are looming around the house that I wasn’t prepared to come back to. I forgot how much I had poured myself into work and working out before the trip, so coming back to a normal schedule is a bit strange and leaves me time to deal with things I have been avoiding. Let’s just say, it’s been a bit weird to be home, but it’s only been a few days so I am pretty sure once I get a week under my belt, I’ll have a different perspective. All I can say is that I am REALLY happy to be getting back into the kitchen. I didn’t realize just how much I missed cooking and baking!
2. Speaking of getting back into cooking, I really want to start diving into other cuisines! All of these Indian cookbooks are currently on my to-buy list, but I can’t decide which one to reach for first… Which would you try? I’m leaning towards Season, I think…
3. Song of the Week is I’m On Fire by Soccer Mommy. This is a Bruce Springsteen cover and I am loving it. I’m actually obsessed with Soccer Mommy right now thanks to a suggestion from a friend. Check her out, because she is AWESOME. (more…)
