So I’ve been a little more absent at the start of this week with the recipes, BUT I have a realllllly good reason for it.
I’ve been organizing ALL the things in my life.
Like. Literally. Everything.
It’s basically been a Marie Kondo explosion in our house. (more…)
1. When you finally upgrade your phone and you use it to take ALL the photos of your dogs… YUP, I am that doggie mama. Just in case anyone was wondering. Honestly, I haven’t had a phone upgrade this substantial in a LONG time and I am super happy that I treated myself to it. Did you know that Portrait mode actually works perfectly for beauty shots of your pets?? LOL
2. My brother is one of those people who inspires me daily to be grateful for everything I have in life. So when I came across this article – 12 benefits of gratitude that will bring you everlasting happiness – it made me think of him immediately. Especially #4 and #5 on this list. Read it, absorb it, and embrace gratitude. It’s honestly the one change I’ve made this year that has really impacted my happiness.
3. Song of the Week (much to the Man’s dismay) is Cannibal by Kesha. I have FINALLY gotten back into running and this song is the one I play on the last quarter of the second mile, when I need to push myself to run just a little bit more but my legs feel like they are going to fall off. It’s the most ridiculous song EVER but the beat is perfect. Don’t judge me. (more…)

Hope everyone’s enjoying the weekend. I am back on Weight Watchers tracking everything I eat (I go back to tracking anytime I need to lose a few pounds, like after a vacation or the holidays) and I’ve been sharing my daily routing on Instagram stories, if you are interested you can follow along, here is my Instagram. It’s also a year since my Dad passed, so it’s fitting to add his Czech Crepes with Berries and Cream to the meal plan this week, I grew up making them with my Dad.
And if you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.
Lastly, if you’re on Facebook join my Skinnytaste Facebook Community where everyone’s sharing photos of recipes they are making, you can join here. I’m loving all the ideas everyone’s sharing!
Also, if you don’t have the Skinnytaste Meal Planner, now would be a great time to get one to get organized for 2019! There was a print error last year, but it’s perfect now! You can order it here!
THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!
*This is just a guide, women should aim for around 1500 calories per day. Here’s a helpful calculator to estimate your calorie needs. I’ve left plenty of wiggle room for you to add more food such as coffee, beverages, fruits, snacks, dessert, wine, etc.

Chicken Thighs with Shallots in Red Wine Vinegar (Poulet Au Vinaigre)
I lightened up this popular French chicken dish known as Poulet Au Vinaigre, which is made with chicken thighs and shallots cooked in red wine vinegar and white white.
Red wine vinegar gives it an intense, tangy flavor, that mellows as it simmers. Shallots are similar to onions, and are always a staple in my house along with onions and garlic. They can transform any ordinary dish and make it extraordinary. The ease of this dish makes it perfect for a busy weeknight dinner.
