Grilled Steak With Tomatoes, Red Onion and Balsamic

One of my favorite ways to make grilled steak in the summer is topped with fresh chopped tomatoes, red onion, balsamic and oil. It's fresh and a great way to enjoy those end-of-summer tomatoes!

Skinnytaste Dinner Plan (Week 89). Adding some favorites to this weeks menu along with some new recipes from last week. The weather is cooling down, perfect for zucchini soup which I added to the menu this week! It’s super light, perfect with a sandwich for dinner!

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Cubano Chicken (Pickle, Ham and Swiss Chicken Roll Ups)

This Cubano Chicken Roll Up idea came to me after having a serious pickle craving! I wanted to make a hot dish utilizing dill pickles in some way and decided to stuff a chicken breast with everything you'd normally find in a Cuban Sandwich – pickles, mustard, Swiss, and ham. But I took it a step further and brined the cutlets overnight in pickle juice for extra flavor, the results were outstanding!!!
