http://ift.tt/2ipdIhg

Raspberry Mint Sparklers are bubbly, tart and a little sweet making them ideal for a ladies’ night toast! The fresh mint and raspberry combination with champagne is a delight for your taste buds.

Raspberry Mint Sparklers | cakenknife.com

You guys!! I made a pretty pink drink!!

It’s been WAY too long since I’ve had a night with just the ladies and I think it’s all coming out in this pink deliciousness that you see in front of you.

I can just imagine being with all my gals, round of raspberry mint sparklers in hand, toasting the New Year tomorrow night. Heck, I’ll probably be busting out this delightful little cocktail throughout the rest of the summer. (more…)

Filet Mignon with Port Sauce and Truffle Mashed Potatoes

http://ift.tt/2hslbaP

Filet Mignon with Port Sauce and Truffle Mashed Potatoes is one of the most decadent meals I’ve ever made, so get ready to fall out of your chair after the first bite. This is the one meal no one will ever forget!

Filet Mignon with Port Sauce and Truffle Mashed Potatoes | cakenknife.com

A New Year is almost here… and here I sit, on the verge of excitement and terror about what the next year holds.

I tend to put a bit of pressure on every new year. I’m not 100% sure where the pressure comes from (probably an intensely high standard that I hold myself to in terms of goals for the next year) but it sure is there.

Leading up to New Year’s and after Christmas becomes my binge-eating period for this reason. I know I want to be healthier next year, so I’m going to pack in the decadence now. Just like I know I want to work harder next year, so I pack in the Netflix and laziness now.  (more…)

Wednesday Slice | cakenknife.com

1. The New Year is only a handful of days away and I freaking cannot WAIT. 2o16 has been a weird year of extreme high’s and even more extreme low’s. I am ready to shake off the dust of this year and start with a fresh new start. I am not usually one to make resolutions because I am constantly trying to set new goals for myself throughout the year, but there is something about a fresh new year ahead that makes me feel particularly hopeful about achieving all the goals I already have in progress. Are you setting any resolutions? Tell me!

2. All I want to do is organize my kitchen and pantry like this. And this. And this. AHHHHH SO PRETTY.

3. Song of the Week is I Don’t Wanna Live Forever by Zayn and Taylor Swift. #obsessed and I don’t care who knows it.  (more…)

9. Mexican Cauliflower “Rice”

This Mexican inspired dish of Cauliflower "Rice" uses finely chopped cauliflower, which makes a fantastic low-carb, grain-free stand in for rice. You can season it many different ways, here I sauteed sauteed it with tomatoes, onions, jalapeno and spices.

10. Shawarma Spiced Grilled Chicken with Garlic Yogurt

An easy, grilled chicken version of the classic Turkish street food which is usually cooked on a rotating spit. It is perfect served over couscous with yogurt and cucumbers as I did here, or try it with rice pilaf, or on a pita. Other sides that would work are tomatoes, tahini, olives, feta, or hummus. Harissa would also work great to add some spice!

11. Five Ingredient Chocolate Cheesecake Cups

12. Chicken Curry with Coconut Milk

Chicken, garam masala, cumin and curry spices are simmered with potatoes and coconut milk to give this dish an aromatic flavor you'll really enjoy. Serve this over basmati rice for a complete meal (also great with naan or cauliflower rice to keep the carbs low).

22. Turkey Meatball Stroganoff (Instant Pot, Slow Cooker, Stove Top)

Delicious, turkey meatballs in a creamy mushroom sauce. A family-friendly dish that is so good over egg noodles or serve them over spiralized butternut squash noodles if you want to lower the carbs.

23. Giant Turkey Meatball Parmesan

This isn't your regular meatball, it's HUGE, baked in the oven similar to how you would make a meatloaf, then topped with marinara and melted cheese – I'm OBSESSED!

24. Shrimp Summer Rolls with Peanut Hoisin Sauce

25. Navy Bean, Bacon and Spinach Soup (Pressure Cooker, Slow Cooker, Stove Top)

Bacon makes everything better (in my opinion), especially in this hearty white bean soup. It's delicious, inexpensive, and easy to make and leftovers are even better the next day. I made this in my Instant Pot (doesn't get quicker than that!), but I've also included slow cooker and stove top directions as well.
